The history of mezcal
The strongest evidence demonstrates roots dating back over 400 years to pre-Hispanic Mexico, where indigenous peoples fermented agave. However, it’s production likely goes back further.
Its history is intertwined with that of Mexico and the different peoples within it. It is rich with rebellion, myths and legends, collective imaginations, and pride.
Until the late 20th century, it was seen by many in Mexico as a poor man’s drink and relatively unknown elsewhere. However, it has grown to become a spirit recognised internationally for its diverse and beguiling flavours.
At Época, we try to preserve this history. Indeed, in our name we pay homage to the epoch of mezcal stretching back to its early roots.
It all comes from maguey
The word mezcal has its origins in mexcalmetl. This was a word used by Mexicas (Aztecs) to describe a maguey.
Mexico is a land of magueyes (agaves). More than 150 species have been identified in the country, and at least 52 of them are used in the production of traditional spirits. Among the varieties of magueyes we find Jabali, Tepextate, Cenizo, Arroqueño, Alto, Cupreata, Tobalá, and many more. This diversity, in addition to the methods and inputs used by each producer, results in a very wide range of flavours and profiles.
